If you follow my blog it’s probably obvious that I’m much more of a cook than I am a baker. But even someone like me who loves savory recipes will crave something sweet occasionally. And this collection of My Favorite Flourless Sugar-Free Cookies features the low-carb cookies I make over and over!

And all these cookies are also gluten-free, so you should be able to make them for just about anyone. If you’re looking for a cookie recipe that doesn’t have sugar or wheat flour, I hope you enjoy trying some of my faves!

What ingredients make these cookies flourless and sugar-free?

Most of these cookies use Almond Flour (affiliate link) or another nut flour as the base of the cookie. They’re sweetened with Monkfruit Sweetener (affiliate link). You can also use Golden Monkfruit Sweetener (affiliate link) if you prefer but sometimes I find Classic Monkfruit will dissolve better in recipes that don’t have much liquid.

These Almond Flour Shortbread Cookies are a new cookie recipe, and this was completely a wow for us when we tested the recipe!

My Favorite Flourless Sugar-Free Cookies (6)

Sugar-Free Gluten-Free Triple Almond Cookies have almond meal, almond butter, and chopped almonds, and if you have almond extract a small amount of that will bump up the almond flavor.

My Favorite Flourless Sugar-Free Cookies (7)

I love the chunks of peanut in these Peanut Butter Chocolate Cookies, but use smooth peanut butter if you prefer!

If you like the idea of a shortbread cookie, you can’t go wrong with Chocolate Shortbread Cookies!

My Favorite Flourless Sugar-Free Cookies (9)

Sugar-Free Flourless Cookies with Almond Flour and Flaxseed are a cookie that reminds me a bit of Snickerdoodles, and I love the idea of using some flaxseed meal in a cookie.

My Favorite Flourless Sugar-Free Cookies (10)

I’m reminding you about these favorite Sugar-Free Peanut Butter Cookies as a bonus even this is not really a Christmas cookie. But these are definitely one of my favorites because even though I’m not too much of a sweets eater, I’ve always loved peanut butter and they’re flourless and gluten-free.

My Favorite Flourless Sugar-Free Cookies (11)

And finally, these Flourless Sugar-Free Pistachio Cookies are an older recipe, but these are definitely some of the best cookies I’ve made.

Happy holiday season to all my wonderful readers and blogging friends. Whatever you’re doing to celebrate the holidays this year, I hope you have a chance to enjoy being with the people you love!

I find that after I make the almond flour cookies that I feel like I have a throat full of sawdust. Also, the cookies are always soft? Any idea what I am doing wrong?

    • Kalyn DennyReply

No idea why that is happening to you. What brand of Almond Flour are you using.

The cookies are delicious for me with good texture and they aren’t ever too soft either.

Thank you for the great recipes to make for myself & my carb free friends this Christmas!
Merry Christmas to you and yours!

    • Kalyn DennyReply

Same to you. Hope you enjoy the cookies!

One thing I’ve learned to NEVER use in my keto/sugar-free baking is any of the powdered sweeteners because the erithrytol used in them ruins the baked goods. I’ve had great success using a monkfruit-stevia blend sweetener that’s available in Walmart (Amazon doesn’t carry it, oddly), and with monkfruit classic.
I’m typically making baked goods only for myself, though, so only have to consider whether I like it.

    • Kalyn DennyReply

I don’t think I’ve ever used powdered sweetener in a cookie, at least I can’t remember using it. And I prefer Classic Monkfruit over the Golden Monkfruit, unless the recipe has a lot of liquid.

Thank you for this nice cookies recipes selection, Kalyn! I especially did like your Triple Almond Cookies recipes. I made them a few days ago and they turned out very tasty!

    Merry Christmas, Kalyn!

    • Kalyn DennyReply

So glad you enjoyed them! Merry Christmas to you!

  5. VanReply

Thanks for sharing! Do they keep long enough to put in a Christmas cookie tin?

    • Kalyn DennyReply

Van, I’ve kept my extra cookies in the freezer (so I wouldn’t eat them too quickly) so I’m not completely sure how long they will keep. But I think they will keep several days with no problems, i just can’t say for sure.

  6. SuzanneReply

These look so good! It is amazing that they are sugar free! Can you substitute any other sweeteners?

    • Kalyn DennyReply

Most any granulated sweetener should work in these cookies, as long as it’s a sweetener that you use 1:1 like sugar. Most granulated sweeteners are made that way.

Kalyn, I finally got a chance to bake the pistachio cookies, but used brown “sugar” splenda instead of the regular splenda. I refrigerated for about 6 hours and they turned out great! Very moist (which surprised me) and my co-workers ate them up! A keeper for sure! Thank you so much for the recipe!!

  8. SarahReply

I love that you featured sugar-free, and even gluten-free cookies — everyone should be able to enjoy Christmas treats!

  9. TrigReply

The peanutbutter cookies look like a real winner, and I’m intriqued by the use of flaxseed in the other recipe. Hope you’ve been enjoying a wonderful holiday!
