Ingredients

  • 3 tbsp 3 tbsp butter
  • 1 (4 oz.) 1 (110 g) yellow onion, finely choppedyellow onions, finely chopped
  • 1 lb 450 g ground beef or ground turkey
  • 8 oz. (3¼ cups) 230 g (800 ml) mushrooms, sliced or diced
  • 1 tbsp 1 tbsp dried thyme
  • ½ tsp ½ tsp salt
  • ½ tsp ½ tsp ground black pepper
  • 8 oz. 230 g blue cheese, crumbled
  • 1½ cups 350 ml sour cream

Zucchini fettucine

  • 2 (14 oz.) 2 (400 g) zucchini
  • 2 tbsp 2 tbsp olive oil or butter
  • salt and pepper

Making low carb simple

Instructions

    Beef stroganoff

  1. Melt the butter in a large skillet, about 10” (25 cm), over medium heat. Saute for 8-10 minutes, or until the onions are tender and translucent.

  2. Add the ground beef, and fry for about 5 minutes, or until browned. Stir in the mushrooms, thyme, salt, and pepper. Cook for about 5 minutes, until the mushrooms are softened.

  3. Add the crumbled blue cheese and sour cream, stirring together until combined. Increase the heat to medium-high, and bring to a light boil. Reduce the heat to medium-low, cover, and simmer for 10 minutes, stirring occasionally. Prepare the zucchini fettuccini.

  5. Cut off the ends of each zucchini, and then slice in half, length-wise. Remove the seeds with a spoon. Use a vegetable peeler, or a spiralizer, to create thin, fettuccini-like noodles.

  6. In a large pot, bring salted water to a boil. Add the zucchini noodles, and parboil for 1 minute. Drain in a colander and then move to a serving platter. Add the olive oil or butter, toss together, and season with salt and pepper to taste.

  7. For serving, plate the zucchini noodles and top with the beef stroganoff.

Tip

Switch it up a little! Shredded chicken makes a great substitute for ground beef.

    Im excited to begin this venture but Im wondering about the use of honey, and Ive been enjoying juicing. How can I sweeten without fruit? Sweeten coffee? Thx, Judy

    Hi Judy, in my experience (LCHF x 9 months) if your goal is low carb be cautious with juicing as you may be consuming more carbs than you intend. I have eliminated fruit from my diet (except for small amounts of blueberries, raspberries and blackberries). Rather than honey you might try liquid stevia natural sweetener which comes in a variety of flavors. Try replacing sugar in your coffee with a sprinkle of salt! It works for me. I make "bullet-proof" coffee every morning consisting of 1 tbsp. grass fed butter, 1 tbsp. coconut oil, generous dash of salt (Himalayan salt or Morton Lite Salt which has both iodized salt and potassium...salt also eliminates the taste of the coconut oil), sometimes a couple drops of flavored stevia (dark chocolate or butterscotch) in about 8 oz. coffee--buzzed in my Magic Bullet (you could use any high-power blender). It becomes a delicious latte and satisfies hunger. If you do go the route of increasing dietary fat and reducing carbs, you will overcome the urge to eat sweet.     Judy...forget juicing. Forget gorging on fruit. Forget honey. It's all full of sugar, makes people fat and gives them diabetes type 2.

    Embrace the bacon, nuts, avocado, coconut butter, olives,...keep the carbs low, get your natural fats high up, and your sugar cravings will go away.

    Admit it, girl....you are a sugar addict. Come clean...get the sugar out of your life. Get the sweet taste out of your life. Start to try to enjoy other flavors...like full fat cream in coffee...or just plain herbal tea without anything else.

    I was concerned that the ground beef wouldn't provide as good a mouth feel as traditional beef chunks, but it worked beautifully and was so much quicker. Thanks for another truly excellent recipe. Brava for all your wonderful recipes. I wish your blog were in English.

    Whoops I only have 4.5 oz. Of blue cheese! Can I use feta ? Or just not use so much cheese?

    Loved this Stroganoff....I didn't have blue cheese so I used Feta and Goat mixture of both. Out of this world wonderful!!! Thanks for the recipe. Looked at your site and wish it was in English. I did use the translation and that worked great!!

    Just starting the LCHF diet..three days in. I'm already losing water weight. I like eating this way. Cheese and bacon have always been faves.

    I'm going to a get together in a couple of days. They're having pizza. Should I just eat the toppings?

    Awesome dish!

    I used just half tbsp of thyme and Greek yogurt mix with cream instead of sour cream because I didn't have available at home.

    No extra salt, the feta cheese has enough for my taste.

    Hi, how many grams per serving is this? And how long can this stay in the freezer once cooked? Can you even store cooked meat in the freezer just for you to thaw it out and cook it again? Sorry I’m new and have no idea how this stuff works.

    This recipe makes 4 servings, weight of the servings can vary depending on how much or how little the ingredients cook down.

    You could try goat cheese or cheddar. If you want a stronger flavor, you could also try using feta.
